This is a delicious warm salad combing baby spinach with fresh strawberries and goat or Feta cheese and served with a full on flavour hot bacon dressing.

Ingredients
 
 

Hot Bacon Dressing Ingredients

  • 250 g thick-cut bacon 6 thich slices, cut into 1” (25mm) pieces
  • 1/2 cup red onion diced small
  • 1/4 cup red wine vinegar
  • 2 tsp honey preferably local
  • 1/2 tsp Dijon mustard
  • 1/4 cup olive oil extra virgin
  • sea salt and freshly ground black pepper to taste

Salad Ingredients

  • 4 cups baby spinach rinsed and patted dry
  • 180 g fresh strawberries 10 large ones, hulled and sliced
  • 100 g goat cheese crumbled
  • sea salt and freshly ground black pepper to taste

Instructions
 

  • Add the bacon to a large nonstick frying pan (skillet) set over medium heat. Cook, stirring frequently, until crispy, about 10 minutes. Transfer the cooked bacon with a slotted spatula to a plate lined with paper towels. Blot the excess grease from bacon with a paper towel and set aside.
  • Carefully drain and discard all but one tablespoon of the bacon grease from the frying pan (skillet) and return to the heat. (Wipe any drips with a thick, damp cloth to prevent a flare up if cooking over flame). Add the red onion and cook, stirring occasionally, until soft, about 5 minutes.
  • Add the red wine, honey, and Dijon mustard. Season with salt and black pepper, to taste, and stir to combine. Cook, stirring constantly, until thoroughly combined and heated through, about 2 minutes.
  • Reduce the heat to low and stir the bacon and extra virgin olive oil into the frying pan (skillet) until combined. Continue simmering on low heat while preparing the salad.
  • Add the baby spinach, sliced strawberries, and goat cheese to a large mixing bowl. Pour hot bacon dressing on top and toss to combine. Transfer the salad to a large serving platter or individual chilled plates and serve immediately. Enjoy!

Notes

If you're not keen on goat's cheese you can use Feta instead.
Turn the ventilation extractor on over your cooker before adding the red wine vinegar to the frying pan/skillet. This will lessen the impact of the fumes.
