This flavoursome dill and cucumber salad recipe is very easy and quick to make – just 15 minutes. However, it’s a great idea to leave the salad an hour or two before serving so the flavours fully develop.
A lot of cucumber salad recipes contain a heavy coating of mayonnaise-based dressing which makes them high in calories.
This lighter version adds a lot of flavours, without overwhelming the cucumber and is just 72 calories per serving
If you prefer a thicker dressing, cut down on the amount of lemon juice used in the dressing recipe.

Dill Cucumber Salad Recipe
Equipment
- Chef's Knife
- Large mixing bowl
- Garlic Grater or Press
Ingredients
Dressing Ingredients
- 1/3 cup Greek yogurt
- 1/3 cup sour cream
- 1 1/2 tbsp lemon juice fresh if possible
- 1 tbsp fresh dill finely chopped
- 1 clove garlic minced
- sea salt & black pepper to taste
Salad Ingredients
- 2 large cucumbers sliced and cut into half rounds
- 1/2 medium red onion thinly sliced
- 1 tbsp fresh dill roughly chopped
Instructions
To make the dressing
- Prepare the dressing by whisking all the ingredients together in a medium bowl until thoroughly combined. Taste and adjust seasonings as desired and set aside.
To make the salad
- Add the cucumber, red onion, and roughly chopped fresh dill to a large bowl. Pour the dressing on top and toss to combine. Serve immediately or chill for up to two hours before serving. Enjoy!
