A dill and Cucumber salad full of flavour

This flavoursome dill and cucumber salad recipe is very easy and quick to make – just 15 minutes. However, it’s a great idea to leave the salad an hour or two before serving so the flavours fully develop.

A lot of cucumber salad recipes contain a heavy coating of mayonnaise-based dressing which makes them high in calories.

This lighter version adds a lot of flavours, without overwhelming the cucumber and is just 72 calories per serving

If you prefer a thicker dressing, cut down on the amount of lemon juice used in the dressing recipe.

To make the salad

  • Add the cucumber, red onion, and roughly chopped fresh dill to a large bowl. Pour the dressing on top and toss to combine. Serve immediately or chill for up to two hours before serving. Enjoy!

If you can’t get fresh dill you can substitute it with 1tsp of dried dill from your shop’s herb and spice section.
Instead of using fresh garlic, you can replace it with 1/2tsp of garlic powder/granules
Prepare the dressing an hour or two in advance, particularly if you are using dried dill, to give the flavours more time to develop.
